Abstract
This study employs Fourier Transform Infrared (FTIR) and Fourier Transform Raman (FT-Raman) spectroscopy to investigate the molecular changes in various parts of the okra plant Okra (Abelmoschus esculentus), specifically the exocarp, mesocarp, and seeds. FTIR spectral analysis indicates a notable decrease in starch content and an increase in protein levels across different parts of the okra. Notably, okra seeds are recognized for their abundance of high-quality protein, particularly rich in essential amino acids compared to other plant protein sources. These results provide important new information for nutritional and agricultural applications by highlighting the biochemical composition and variation in nutritional components of the okra plants.
